This page is what we actually do rather than what would look best. Some of it is good and some of it is a compromise we have not solved.

The detail

What we do,
and what we do not.

Products are made within fifty kilometres.: Pine resin balms from Polygyros, sea salt from Mesimeri, rose otto from Edessa. We name every producer in the journal. This is the part we are most confident about.
The boiler is wood-fired.: It burns offcuts from local olive pruning, which would otherwise be burned in the field. It is not carbon-neutral and we do not claim it is.
There is no retail wall.: The single biggest waste stream in a spa is unsold product. We do not stock one, so there is nothing to throw away.
Water is the hard part.: A hammam uses a great deal of it. We recycle greywater to the olive terrace and we have capped the day-spa at fourteen guests partly for this reason.
Laundry.: Linen only, washed on site at sixty degrees, line-dried from April to October. We replace robes on a five-year cycle rather than annually.
